Pods will grow between 4-6” long and change colors from green to a bright orange-red color at maturity. The skin is semi-smooth and crisp when you take a bite from one of these peppers.
The heat is slightly less than a Cayenne pepper, but will still provide enough of a kick to liven up any food dish. The thin walls of Aji Colorado peppers make for easy drying. Grind these peppers into flakes or powders and sprinkle them on foods such as meats, stews, and stir-fries. They also make for a great homemade sauce or salsa when chopped up.
